Those look like great tostones and there are different variations. I cut the plantain diagonally to get bigger thicker chunks and fried them until they turn dark yellow lightly golden. Smash to a thicker toston and fry until the edges are crisp but center bit chunkier…People also make sandwiches using tostones instead of bread. Larger cut I guess…
